#Chocollaboration Ep2: Screaming Chimp Chilli Sauces

If you haven't come across Screaming Chimp Chilli Sauce, I don't know whether to first introduce you to the big flavours of their sauces, or the big personality of the man behind them. At our Chocollaboration Evening No.2, we were very excited to welcome Niall McKay-Mount into our chocolate kitchen, along with his big, slightly giggly laugh - and his huge passion about Chilli Sauces! He's the main man behind the creation of these recipes, and his fame went before him - we had quite a fan-girl moment from one of the guests, which still makes me smile!

Niall shared his story with us, and he was honest enough to share the lows, as well as the highs of his journey into growing what has fast become the North East's favourite Chilli Sauce company. Thankfully nowadays you will more often than not see a big smile on this man's face, and with good reason - he has created some wonderful products.

We got to taste the Mango & Papaya Chilli Sauce, as well as the Pineapple Chilli Sauce, and the Strawberry Chilli Sauce - and they offer some seriously big flavours. What I particularly loved about them, was that the flavours felt so 'clean', which made me realised how much sauces made with lots of preservatives in them affects both the flavour, and the mouth-feel. These sauces genuinely taste absolutely brilliant, and its easy to see why he has such a loyal following of returning customers.

 

Creative Collaborations

The challenge for the evening was to create chocolates with all the facilities and ingredients of our professional chocolate kitchen. A rare opportunity to step inside our chocolate world, and create new flavours for yourself...

For this session, I demonstrated recipes for making a basic ganache in dark, milk and white chocolate, and how these can be blended with the chilli sauces to infuse the flavours. Simple methods, but the creativity lay in the choice of flavours, ratios and intensity. Some highlight's included Diana's pairing of Strawberry, Mango, Ginger & Chilli (sounds too busy, but it balanced well!); Charlie's creation of Mango, Papaya & Chilli in a white chocolate ganache with crisped rice, and coated in dark chocolate  and Robynne's White chocolate ganache with Pineapple & Chilli. Sue & Steve also crushed some of Niall's chilli peanuts to pair with milk chocolate and lime, which tasted delicious.

One of the fun things about these sessions is getting to try each other's creations, as well as your own - and taking your creations home to your friends and family. There was such a buzz about the evening, and several guests immediately booked themselves on for another session, which is always a good sign. Roll on the next one.
