Classically trained under a second generation master chocolatier, Philippe Burger, Jane crafts chocolates with a beautiful sense of simple sophistication; preserving the traditional Swiss method of ‘enrobing’. Wonderful recipes of creativity are executed by hand with skill and craftsmanship to produce the exquisite chocolate centres. These are then delicately coated in specifically selected smooth and rich chocolate couverture using an antique enrobing machine, bequeathed by Philippe Burger. Like a Willy Wonka machine of delights on a humble scale; a chocolate ‘water’ wheel draws molten chocolate to a height, before it cascades back into the vat as a tiny chocolate waterfall; A beautiful velvety curtain of chocolate, through which the centres pass on their journey to become sumptuous chocolates.
These, sometimes labour intensive processes, supply a rich heritage to Jane’s contemporary and stylish creations. Each chocolate can be enjoyed in the knowledge that it is uniquely handmade.
A professional chocolatier since 2000, Jane has made chocolates for the Queen, The Shay Given Foundation, Newcastle United Football Club and Ant & Dec’s Breakfast Show as well as a host of prestigious restaurants and establishments.
